A story of family, time, and silent passages

There are stories that are not born to be told.

They are born to be lived, slowly.

Ours begins in a vinegar attic, among the scent of simmering grape must and the silence of resting barrels. Before being called Origine 1977, this place had another name: Acetaia Al Parol.

Parol means cauldron. That is where everything begins, where grapes become cooked must, where time stops rushing. It was not just a name, but a promise: to respect every step, without shortcuts.

In 1977, Valerio and Denis gave life to this promise. Year after year, season after season, the vinegar grows alongside the family. The barrels observe, absorb, wait. And they teach.

In 2024, something changes.
Not through rupture, but through continuity.

The vinegar attic passes to Laura, the youngest daughter. A gesture that is not just a transfer of ownership, but an act of trust. Laura does not disrupt: she listens. She observes. She improves. She reshapes what already exists, with respect and care.

Thus, a restyling is born, made of small details and conscious choices.
And a new name is born: Origine 1977.

Because sometimes, to look ahead, you must return exactly to where everything began.

L’acetaia passa a Laura, la figlia più piccola. Un gesto che non è solo un passaggio di proprietà, ma un atto di fiducia. Laura non stravolge: ascolta. Osserva. Migliora. Ridà forma a ciò che già esiste, con rispetto e cura.

Nasce così un restyling, fatto di piccoli dettagli e scelte consapevoli.
E nasce un nuovo nome: Origine 1977.

Perché per guardare avanti, a volte, bisogna tornare esattamente da dove tutto è iniziato.

Learning the craft, drop by drop

In this new chapter, Mark also enters the story — Laura’s husband.

Also in 2024, Mark decided to listen to time. He began the journey to become a Master Taster of Traditional Balsamic Vinegar of Modena DOP, studying, tasting, refining his palate and his respect for every single drop.

But the most valuable teaching happens far from the classroom.

It happens beside the barrels, together with Valerio — Master Taster, father-in-law, and guardian of a knowledge that is not written, but passed down. The tricks of the craft, the silences, the gestures repeated over a lifetime.

This is how tradition continues: not by imposition, but by love.

Origine is family.
Origine is time.
Origine is waiting.

Each battery tells a story made of patience, of hands passing the baton, of generations meeting without noise. Here, nothing is immediate, because what truly matters needs time.
