Every drop tells our story: a love for the land, for native grape varieties, and for small sets of barrels crafted from carefully selected woods. The result? Harmonious, complex condiments, capable of enhancing every dish from the simplest to the most refined.

Every product born here carries with it years of patience, wood and Modenese countryside. From the barrels awarded Batterie d'Eccellenza 2024 & 2025 to the single-wood condiments you will not find anywhere else this is the result of nearly fifty years of quiet, patient care.

Alisa - 250ml

ALISA is the name that our youngest child used to call his sister Elisa, when letters still got mixed up with affection. Like her, this product is the point where everything begins: the acetified must drawn from the last barrel in the battery the youngest one, where the balsamic takes its first steps.

It is light, fresh and versatile, with notes of dried fruit, ripe grape and a simpler balance. Perfect for everyday use: on salads, on vegetables, for marinades, to add a sweet-sour touch to your daily recipes.

Lively, direct, authentic. The origin of everything — just like a name mispronounced with love.

Anne - 250ml

ANNE is the name that our son Andrea used to call himself when he was small, when words were still being invented. An exclusive blend of Extravecchio and cooked must sweet, round, generous that carries his name for a reason: like him, it takes something great and makes it accessible to everyone.

In a family, the truest names are the ones children give themselves.

It expresses itself best on fresh and aged cheeses, meat carpaccio, grilled vegetables and salads. Excellent on strawberries and vanilla ice cream for those who love sweet-savoury contrasts. Its soft sweetness makes it versatile in the kitchen, perfect for light marinades or as an elegant finishing touch on everyday dishes.

Balsamic Condiment aged in Cherry Wood – 50 or 100ml

Minimum ageing 12 years

Cherry wood, soft and aromatic, gives this condiment sweet and fruity notes, with hints of almond, light vanilla and ripe red fruit. Its elegance makes it particularly suited to dishes that call for delicacy and harmony.

It pairs beautifully with eggs, enhances the freshness of soft cheeses, harmonises with sweet ripe fruit, and integrates naturally into filled pasta and creamy risottos.

Balsamic Condiment aged in Oak Wood – 50 or 100ml

Minimum ageing 12 years

Aged in oak barrels, this condiment offers structure and depth: vanilla, cocoa, toasted wood and an elegant return of sweet spices. Oak the classic wood of wine barriques gives the condiment a warm, robust base, making it ideal for rich and enveloping dishes.

Perfect on roasts, braises, thick soups and meatballs: a true explosion of balance between sweetness, acidity and body.

Balsamic Condiment aged in Juniper Wood – 50 or 100ml

Minimum ageing 12 years

Aged in juniper barrels, this condiment carries unique and wild aromas: resin, woodland herbs and a bold, rustic character that sets it apart from any other balsamic.

Perfect for those who love a more intense and aromatic profile: it works beautifully on game, grilled meats, aged cheeses and roasted vegetables, bringing a sophisticated and unexpected touch.

Traditional Balsamic Vinegar of Modena DOP "Affinato" – 100ml

Ageing 12-24 years

Born from a long and patient ageing process in a battery of barrels made from different woods. The result is a harmonious and dynamic balsamic, with well-defined aromas, notes of cherry, cocoa and sweet spices. The syrupiness is generous, the profile elegant.

Every bottle is DOP certified and bottled in the 100ml format designed by Giorgetto Giugiaro the guarantee that what you hold in your hands is authentic, controlled and unique.

Pairings: meats, roasted vegetables, fish, aged cheeses.

Traditional Balsamic Vinegar of Modena DOP "Extravecchio" – 100ml

Minimum ageing 25 years

Our jewel. Aged for over 25 years in the same historic barrels some built with cognac wood from the 1800s this is the final destination of a journey that begins with ALISA and passes through every wood, every season, every annual racking decided by Valerio.

Deep dark brown in colour, on the nose it releases complex notes of ripe plum, tobacco and chestnut honey. On the palate, a velvety sweetness balanced by elegant acidity, with a persistent and refined finish that lingers long after.

This is not a cooking ingredient. It is used in drops, directly on the plate, at the very end. On aged Parmigiano Reggiano, on fresh fruit, on a teaspoon on its own at the end of a meal. A few drops are enough to understand why this product exists.

Pairings: Parmigiano Reggiano, fresh fruit, foie gras, ice cream, pure tasting.

Artisanal Balsamic Vinegar Pralines
