Recipes with our Balsamic Vinegar

Fifteen pairings born from our barrels. Every recipe is designed for a specific product because cherry wood is not used like juniper, and Extravecchio is not used like Affinato. Traditional balsamic vinegar is not a generic condiment: it is a precision instrument.

Always use it raw, at the end, directly on the plate. Heat is its only enemy.

Starters & Vegetables

Eggs and sautéed asparagus with Affinato
Egg cooked to your liking with asparagus sautéed in a pan. 5 drops of Affinato raw before serving.
Recommended product: Affinato 12-24 years

Beef tartare, crispy celery and Juniper Condiment
Lean beef seasoned with oil, salt, pepper and mustard. Crispy julienne celery and 3 drops of Juniper Condiment.

Baked onion with soft polenta and Cherry Condiment
Red onion baked in the oven, stuffed with creamy polenta. 2 drops of Cherry Condiment before serving.

Prawns steamed and served on smoked purée. 2-3 drops of Affinato raw.

Parmigiano Reggiano risotto with Extravecchio
Classic risotto creamed with 30-month Parmigiano Reggiano. 3 drops of Extravecchio only at the very end, never during cooking.

Wholegrain spelt with roasted pumpkin and toasted seeds. 5 drops of Cherry Condiment raw.

Seared foie gras on toasted brioche with flaked salt. 2-3 drops of Extravecchio raw.
